does les anyone know where where there are some videos to watch to help with examples of infringements, i.e. Off sides, rucks and scrum and so on to be able to see it in play, rather than a instructional video of what it is?

Check out the law section of the South African Ref Society. Everyweek they review and explain calls/laws from the previous week's games with videos.
