Just watching the six nations game ireland v italy... from the kick off Italy kick the ball into the irish in goal area, Irish player grounds the ball without hesitation, referee awards a 22 drop out...

reading rule 13, would it not be a scrum on the halfway or ask the italian to kick off again?

Correct, Law 13.9(b) - Ireland scrum at half-way line or Italy kick again.

Ireland then took 22 drop out and gave ball back to Italy. They should be embarrassed as professionals that they didn't know that they should be retaining the ball instead of kicking back to their opponents.

are you blaming the players for a ref's mistake?

the referee is primarily accountable for what happens next after the ball goes dead, because he makes a decision. however, when the ball goes dead in in-goal or from a kick-off there are generally options available. maybe ireland didn't have to give possession to their opposition if they had known their options? i guess we'll never know.....

It's a three way option isn't it? The defenders can choose kick again, scrum or 22.
Perhaps it was they eho had the brain fart ... and chose 22
